It's time for corn bread!

Hey y'all! Being new to the whole blogging thing, it is so exciting to receive comments on my posts! What a way to brighten my day! It is so great to hear how many of you agree with my love of the south and sweet tea.

I have found a recipe for corn bread that sounds so delicious and figured I would share it with all of you! I have not tried it out yet, but courtesy of Paula Dean I don't think it could be any less than amazing. Hope you enjoy it!

Ingredients
  • 1 dried Chipotle chile
  • 3/4 cup coarsely ground yellow cornmeal
  • 1/4 cup all purpose flour
  • 1 teaspoon doubleacting baking powder
  • 1 1/2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 tablespoon unsalted butter
  • 1 small onion, finely diced
  • 2 1/2 teaspoons chilled shortening
  • 3/4 cup buttermilk

Directions

Place chipotle chile in a small pot and add 1/2 cup of water. Bring to a boil, cover and remove from heat until cool. When cool, remove stem and seeds from chipotle and chop finely.

In a large bowl, combine the cornmeal, flour, baking powder, sugar, salt and baking soda. Melt the butter in a medium skillet over medium heat. Cook the onions until soft, about 5 minutes. Add chopped chipotle and set aside.

Grease a cast iron skillet (6 inches in diameter and at least 1inch deep), with 1 teaspoon of the shortening and heat skillet in a 450 degree oven for 10 minutes. Add the remaining shortening to the cornmeal mixture and blend until it resembles coarse crumbs. Add the onion mixture and gradually stir in the buttermilk so that batter that barely holds its shape. Stir until just mixed.

Pour batter into the hot skillet and bake it in the middle of a 450 degrees oven for 10 to 12 minutes. Cool for 5 minutes in the pan. Place a rack over the skillet, turn skillet over and invert bread onto rack.

    OHHH! I love cornbread! This sounds like a reslly good recipe I will have to try it! I have been looking for a cornbread recipe that is sweet. I guess I will just have to add more sugar as your recipe sounds really good!

    I have recently moved to Georgia from Washington State and am enjoying the southern way of doing things. I love it here so far - especially today - it was 78 degrees out while it was snowing in my hometown of Seattle - I love it!

  7. I have all of Paula Deen's cookbooks except her new one due out in April and her cookbook directed toward children, so I won't need to copy this one; I should already have it.

    In looking at the books listed in your sidebar, I have to agree with the two selections that I am familiar with. I have two books by Mildred Council (Mama Dip) and both have down-home recipes. She considers herself a "dump" cook, so writing the books was difficult for her. She just continues to "dump" in ingredients until the dish looks, smells, and tastes the way she wants. She has an inborn talent to be able to tell when things are just right. I also have Mrs. Wilkes book. Those three books along with a book given to me by my sister called "Southern Cooking From Mary Mac's Tearoom", are my go-to books for good Southern food.

    All three ladies have owned eating establishments, so they must be doing things right. As these ladies are aged, I'm not sure if their businesses are still open.

    Just the other day I found another Paula Dean recipe I want to try for a St.Paddy's Day dessert.
    Even though I live in the North and I'm originally from Germany how can a girl not love sweet tea.
